Lawas Rice Risotto Recipe

The Yum List asked some of our favourite chefs around Kuala Lumpur what’s cooking in their kitchens during Malaysia’s Movement Control Order. Today, chef Raymond Tham of Skillet at 163 and Beta KL shares his recipe for Lawas Rice Risotto with Pan-seared Scallops.

Lawas Rice Risotto Recipe with Pan-seared Scallops

The recipe is not only great in texture and aroma but also uses local ingredients. Lawas heirloom rice is produced by the Lun Bawang Ethnic Group in Kampung Semadoh, Sarawak. Using the rice helps the ethnic minority financially and keeps heirloom products alive. Kelulut honey is pure honey, high in antioxidants, and has anti-bacterial properties. It’s an excellent time to be building our immune systems with such produce.

INGREDIENTS

Scallops
Seared -scallops
4 scallops
Cooking 0il
Butter

Risotto
Lawas rice by Langgit Collective 60g
Butter 40g
Chopped onion 5g
Grated Grana Padano or Parmesan 40g
Salt & pepper to taste
Fish stock or water 200 – 300g (depend on the heat on your stove)

Chive & Honey Dressing
Honey (Kelulut) 10g
Chopped Chives 3g

METHOD

Chives & Honey Dressing
1. Chop chives and add in Kelulut honey. Add a dash of lime juice if you are using regular honey.
2. Reserve for later

Lawas Rice Risotto
1. Heat up a pan. Follow by adding in the chopped onion to sweat (cook without browning).
2. Add in rice and stir until the grains become transparent.
3. Add in water/fish stock, a ladle at a time. Stir with a wooden spoon and wait until all liquid has been absorbed before adding more.
4. Stir in butter followed by the cheese.
5. Check the seasoning and consistency of the risotto. Add in more water/ fish stock if required.

Pan-seared Scallops
1. Pat dry scallops with a kitchen towel. Drizzle a bit of oil on scallops and lightly season with salt.
2. Sear scallops on the hot pan until brown. *Optional: Add in some butter.

Plating:
1. Pour risotto on a plate.
2. Arrange seared scallops on the risotto follow by chives & Kelulut honey dressing.

  1. Oh? Is he from Lawas? I bought rice from Bario, didn’t know Lawas has rice too when I went to the farmers’ market in Miri. Could have looked for it there.
